Thankfully, this savory jam lasts for quite a while and is easy to make so you can always have a little stash on hand. Bacon Jam also makes a great gift for any bacon-lovers that you know. Just fill a small mason jar, add a cute tag, and prepare to wow your friends and family.

What is Bacon Jam?

Bacon Jam is a thick spread made from cooking bacon, onions, and garlic with maple syrup, brown sugar, and spices. The combination of savory bacon and caramelized onions combined with maple syrup, brown sugar, and a touch of chili powder is truly a little taste of heaven. I’ve eaten Bacon Jam on everything from cheese plates, grilled cheese sandwiches, burgers, scrambled eggs, breakfast casseroles, waffles, pasta, and pizza.

Bacon Onion Jam Ingredients

  • Bacon - you can use any kind of bacon that you want, including thin or thick cut bacon. You’ll want to chop the bacon into ¾” slices before cooking.
  • Onion - I like to use either white or yellow onions when caramelizing onions because they have a slightly higher sugar content. You could also try using red onions.
  • Shallots - shallots have such a beautiful sweet and mellow onion flavor that is delicious in this jam. You could also substitute yellow or white onions if you prefer.
  • Garlic - fresh minced or grated garlic is the way to go for this recipe. You could use the jarred garlic in a pinch.
  • Maple Syrup - for the best flavor, try and use pure maple syrup rather than pancake syrup which is mostly corn syrup.
  • Brown Sugar - either light brown sugar or dark brown sugar will work.
  • Chili Powder - feel free to add more or less depending on your own preference. Fresh cracked black pepper would also make a nice addition.
  • Apple Cider Vinegar - the acidity rounds out the flavors beautifully. You could also substitute balsamic vinegar or a combination of the two.

How to Make This Easy Bacon Jam Recipe

  1. Cook the bacon. In a large skillet over medium heat, add the bacon and cook until golden brown and crispy. Remove the cooked bacon from the skillet using a slotted spoon and drain on a paper towel-lined plate. Set aside.
  2. Cook the onions, shallots, and garlic. Remove all but about 3 Tablespoons of bacon fat from the pan, then add the diced onion and shallots. Cook over medium heat, stirring occasionally, until the onions are lightly caramelized - about 7-8 minutes. Add the garlic and cook for another 2-3 minutes until caramelized and fragrant.
  3. Add the rest of the ingredients and cook. Add the reserved cooked bacon, maple syrup, brown sugar, chili powder, and apple cider vinegar and cook for about 5 minutes until the mixture reaches a jam-like consistency, stirring constantly.
