It's officially casserole season.
When it's cold outside, there might be nothing more comfortable than a casserole? As the temperatures start dropping come fall, they're ALL we crave. They’re simple to throw together; can be filled with all your favorite seasonal ingredients (butternut squash! turkey! Brussels sprouts! sweet potatoes!); and can easily feed a hungry group (think: after-school crowds or tailgate dinners). Of course, casseroles can be enjoyed year-round (check out our summer casseroles for proof), but there’s really something special about a fall casserole. They’re hands-down the easiest weeknight dinner option because of their ability to turn more elaborate meals into one-pan marvels. Love chicken pot pie, but hate rolling out pie dough?
